Pata con Setas

Sangkap:
  • 1½ pata (pork leg), hiwain sa maliit na parte
  • 2-3 pirasong chorizo, hiwain
  • 400 g lata ng cannellini beans, alisin ang sabaw sa lata
  • 400 g lata ng chopped tomatoes
  • 4 kutsarang tomato paste
  • 3 tasang tubig
  • 2 kutsaritang paprika
  • 2 pirasing laurel ( bay leaf )
  • 1 malaking sibuyas na puti, tadtarin
  • 6 pirasong bawang, pitpiting at hiwaing maliliit
  • olive oil
  • asin

  • 1 bungkos ng bok choy, alisin ang dulo at ilagay sa kumukuong tubig ng 3-5 minuto at hanguin agad
Paraan:
  1. In a large pot add oil then sauté garlic and onions.
  2. Add pork leg and lightly brown all sides.
  3. Add the chorizo, paprika and 1 tbsp of the tomato paste, stir and cook for 2 minutes.
  4. Pour water, chopped tomatoes and add the bay leaf, bring to a boil then simmer in low heat for 1 hour and 30 minutes. Check liquid levels once in a while and add more water if needed.
  5. Add the cannellini beans and the remaining tomato paste, simmer for 15 more minutes, season with salt and freshly ground black pepper then serve with blanched bok choy on the side.
